You will need:
3 eggs1/4 cup milk (lowfat or whatever you like, but just cannot be rice milk or almond milk, for some reason it doesn't mix with the eggs. If you don't want to use milk, you can leave it out)
1 yellow pepper
1 yellow onion
1 clove garlic
1/2 cup olive oil
1 tablespoon butter1 cup shredded mozzarella cheese
wraps (any kind you like, I used Ezekiel but they were a bit hard)
hot sauce (any kind you like and any degree of hotness! I used an apricot pepper syrup which was good, but after tasting I prefer alittle more spicy)First, sautee your garlic with the olive oil and butter on medium heat.
Add the 1/2 a chopped onion, with 1 chopped yellow pepper.
While they are sauteeing, on the side crack your 3 eggs into a cup.
Mix so that the yolk and whites are completely mixed together. (You can add milk to the mix here or leave it out, in my experience it seems to make the eggs more fluffy).
Sautee until the onion is transparent.
Pour egg mixture into pan so that the onions, peppers and eggs are cooking together.
Begin to scrape the egg up when you see it becoming more solid.
Leave this on low heat for about 10 minutes but watch it closely, burnt egg tastes horrible! (trust me, I know lol)
Then take 2 of your wraps out and open them on a cutting board or clean counter top.
Take a spoon and spread your hot sauce on the wrap.
Sprinkel cheese on the wrap. Once the egg mixture is scrambled, take a spatula and place egg mixture on top of cheese in a line going down the center of the wrap.
Next, fold the wrap up from bottom, and in on both sides, and wrap in foil.
I placed these in the fridge for the next morning before work, and I heated them in the oven for 15 minutes.
Its a great thing to get ready quickly before work. They were delish!
