Off work today woo hoo! And Pumpkin Bread Recipe!

Today I have off work for election day! Woohoo! I love having an extra day off with no class where I get to bake something and just sit on blogs and scroll through and slowly read everything and then watch the View and drink Chai! Lol Isn't that pathetic!? And I don't even have kids:) So today I was just watching "Rachel Rae Show" and she has a few women on her show who have blogs with blogspot! Isn't that cool!? One woman started mybrownbaby.blogspot.com (I'm going to go and check out her blog after this) for women who are African American mothers. Pretty cool! Ricky Lake is also on talking about what its like to be a mom for her, (she also starred in and produced the movie available on Netflix "The Business of Being Born" which is an amazing film about her journey to having a natural childbirth). I love her! Rachel Rae's talking about now how 40 years ago women had less, were in charge of less, and weren't as much of the breadwinners we are today, but were Happyer!? Now she's talking about how she is really happy when she can get home and make dinner, and have quality time with her family, but she is happy with her life, but sometimes she struggles with all the jobs she has. Wow, I need to watch more tv! This is great! I like getting feedback about different mom's because Martin and I are beginning to have some baby talk. Its always interesting to get different perspectives on how people parent and how people live with one person working, and how they live with two working. How do you feel about working vs not working as a mom?
This morning I was so excited to have the day off I baked some pumpkin bread! The recipe is from Katie at Good Things Catered, check out her blog, she has some amazing recipes! And this one is especially great because of all the warming, spicy ingredients to help heat up the body for this cold November day!

You will need:
3 cups all purpose flour
2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
2 tbsp ground cinnamon
1 tbsp ground ginger
2 tsp ground nutmeg
1 tsp ground cloves
2/3 cups milk
1 tsp vanilla
12 tbsp butter
2 cup granulated sugar
2/3 cups packed brown sugar
4 large eggs
2 cups pumpkin puree

To Make -

1- Heat oven to 350 degrees. Whisk together flour, soda, powder, salt and spices.


2- In another bowl combine milk and vanilla
3- In large bowl of mixer beat butter until creamy
4- Gradually add sugars and beat on high speed.


5- Beat in eggs one at a time
6- Add pumpkin puree on low speed until blended.

7- Add flour mixture in 3 parts alternating with the milk mixture in 2 parts beating on low until combined.
8- Scape batter into pan and spread evenly.

9- Bake at 45 minutes (I baked for an hour, I think my loaf was a little thick!) until toothpick inserted into center comes out clean.

Let cool and enjoy!!

  1. I don'think your morning sounds pathetic at all - but it's good you don't have kids right now, becuase I guarantee you would not have the time to read blogs, watch tv, and drink chai if you did;)

    The pumpkin bread looks deelish!!! Will def have to try that one:)
