Frugal Tip Friday - for your lunch! A ChickPea Salad

The cheapest foods I've been told are beans. Beans last forever when they're dried and when cooked they are so yummy! Last night after work, I wanted to go and pick up something easy to make at home but I knew we were done with our budget for groceries for the week so I sighed on the way home thinking about what to make for dinner last night and lunch today. When I got home I rummaged through the veggie tray in our fridge and found a tomato, a red pepper and alittle lettuce. I found some leftover quinoa in the fridge that I made earlier during the week and some mozzarella cheese. Going through the pantry I found a bag of dried garbanzo beans (chickpeas) that I hadn't used yet, and I realized that I really didn't need to get more groceries, we had plenty! So I put about 2 cups of chickpeas in the rice cooker (I love my rice cooker, it is good for everything!) in with 4 cups of water.



That took about 1 hour and half to cook through. While that was cooking, I took the chopped salad and put that in a bowl, along with the leftover quinoa, cubed cheese, cut up tomato and cut up red pepper. After the chickpeas were done, I mixed them in with the salad. Then for a dressing I mixed half a cup of olive oil with 1/4 cup of apple cider vinegar. It turned out to be a great salad! We ate it last night for dinner and I even have some fun leftovers for lunch today! Here is this easy peasy frugal recipe written out below for you to try!

You will need - one red pepper cut up, one cup quinoa cooked, one tomato cut up, 2 cups chickpas (cooked), about 1 cup chopped salad, 1/4 cup apple cider vinegar, 1/2 cup olive oil.

Mix all together and you have your chick pea salad!

Beans are the best foods, they are inexpensive, last forever, tasty and go with just about anything!

  2. I would totally eat that! My husband however has tarnished (brainwashed!) my kids into thinking that anything bean is disgusting. I understand it is a texture thing--I don't like liver for this reason--but give a bean a chance! hahaha. Yum! Plus beans are super high in fiber which means they are more filling! Great recipe.

  4. Love this. Always trying to do that (put together stuff I have around the fridge/pantry) though my dishes don't usually turn out as well.
