Grandma Allegretti's Roasted Tomatos

Last weekend I prepared my favorite way of making roasted tomatos. First I just want to say that I never never eat plain tomatos, for some reason they just don't taste good to me. I need something else on them, like salad dressing or oil and mozzarella and basil, to taste good enough to eat. BUT my I can always eat my grandma's roasted tomatos (even though they technically are made with basil and garlic) they are otherwise plain tomatos and sooo delicious! I could never understand how she got them to taste so sweet, and after she told me the recipe I figured it out, its the oil from the basil! Here's what you'll need - 5 beefsteak tomatos (cut longways), 1 cup olive oil, handful of fresh basil (each piece broken off), and 1 head of garlic (minced).
First, take tomatos and place in a baking pan. Next pour in olive oil and spread minced garlic over top of tomatos. So easy right??!



Now here's how she gets them sweet...place them in oven for 20 minutes at 350 degrees. After 20 minutes, take out tomatos and spread out basil overtop of tomatos. Then cover with foil or top of baking pan. Place back in oven at 350 for another 20 minutes.


Take out after 20 minutes and let cool slightly. Take off foil. My grandma takes off the basil and just gives us a whole tomato piece (and by this time all the essential oil from the basil has leaked into the tomato) mmmmm Sooooo good! If you don't mind serving with the basil on top (it might look prettier without) you can just take off and serve tomato, or else serve each piece with basil on top. They turned out exactly like hers, it was great taste those sweet tomatos again!

  2. thanks Shan! Thats a great idea...canning them mmmmm:) I want to try that canning recipe you put on your blog awhile ago this fall, maybe I'll do it with these! hey, you know I just realized, canning it could kinda make it like a spaghetti tomato sauce!
