Blueberry Cobbler

A few nights ago I made Blueberry Cobbler for the first time. I got a great recipe from and here is a description of my first time experiment with cooking with blueberries:)

You will need: 2 1/2 cups fresh or frozen blueberries, (I used fresh) 1 teaspoon vanilla extract, 1/2 lemon, juiced, 1/2 cup white or raw sugar, 1/2 teaspoon all-purpose flour or rice flour, 1 tablespoon butter, melted, 1 3/4 cups all-purpose flour, 4 teaspoons baking powder, 6 tablespoons white or raw sugar, 5 tablespoons butter, 1 cup milk (i used lowfat), 2 teaspoons raw or white sugar, 1 pinch ground cinnamon.

First - grease baking dish, I used one below that was what recipe asked for about 8 inches by 5 inches. Put blueberries in bowl along with vanilla and lemon juice and mix together. Transfer to baking dish (can also do this in the baking dish).
Sprinkle over top one cup sugar and 1/2 teaspoon of flour then stir in melted butter. Set aside.

In bowl, stir together 1 3/4 cups of flour, baking powder, and 6 tablespoons sugar. Stir in the 5 tablespoons butter with spoon or your fingers (I used a spoon). Make a well in the center, and quickly stir in the milk. Mix just until moistened. Cover, and let batter rest for 10 minutes.

Preheat the oven to 375 degrees F (190 degrees C). Spoon the batter over the blueberries, leaving only a few small holes for the berries to peek through. Mix together the cinnamon and 2 teaspoons sugar; sprinkle over the top. Bake for 20 to 25 minutes in the preheated oven, or until the top is golden brown. I baked for 25 minutes and after we had a bite of the ends, saw that the middle of the loaf was still doey! So I actually baked for another 20 minutes and it turned golden brown on top and was finished through. Let cool until just warm before serving. This can store in the refrigerator for 2 days.

I've never had blueberry cobbler before, it was very sweet and tasty and the top crust was warm! It was so good, I've had it for breakfast this morning too (with it being cold its a bit easier to scoop out the blueberry!
