Frugal tip Friday - using your whole pumpkin

This is the pumpkin season and its always nice to know and frugal that you can use the whole pumpkin after carving or putting it out for decoration.  Roasting the pumpkin seeds in alittle drizzled maple syrup and salt is a great way to make them into a yummy snack! And you can even make cookies using the pumpkin "meat"! Here is a great recipe for making your own pumpkin cookies from scratch:


You will need:

For the cookies:

8 ounces butter
1 cup sugar
1 cup brown sugar
1 egg
1 tsp vanilla
1 cup pumpkin meat pureed (pumpkin meat is like the stuff you eat on a watermelon but on a pumpkin!)
1 cup oats
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 cup raisins (I used golden but you can use any kind you like)
2 1/2 cups of all purpose flour

Preheat oven to 350 degrees. Cream together butter, all sugars, and beat in egg along with vanilla and pumpkin. In a separate bowl mix oats, baking powder, cinnamon, salts, raisins and flour. Stir in pumpkin mix into dry ingredients. Make cookie balls and place on piece of parchment paper or cookie pan. Out in oven for 15 minutes. The recipe says 15 minutes, but I had them in there for 20 minutes, and they still weren't the right cookie crunch that I like, so I put them in for another 15 and they turned out great!  If you make them normal size and not jumbo like I did, then you may only need the required 15 minutes for baking.

In between the two 15 minute cooking times I added the glaze onto the top of the cookies. (it helped add even more of a crunch)

To make your glaze:

2 cups confectioners sugar
3 tbsps milk
1 tbsp butter
1 tsp vanilla

Combine, mix and drizzle on top of your pumpkin cookies!


Yum!

    4. What are you doing to me??? Hahaha. I have pumpkin cookie recipe too. It has chocolate chips in them. Soooo good. I bet yours is too! Yum!
