I work all the time towards making a lemon meringue pie. Every summer I make them and either make the lemon perfect, but burn the meringue, or make the meringue perfect but the eggs seperate. Well this Easter I tried using rice flour as a healthy alternative to all purpose white flour...well that DIDNOT work!!! It turned the lemony pudding mixture, even when chilled into a soupy watery mess. The meringue and graham cracker crust turned out well though. After dinner Martin and I went to our apt and I took it out of the fridge, he said to stick it in the freezer for 10 minutes so I did. After 10 minutes, still no cigar...this lemon pie was not hardening!! He said to serve it in mugs...he's so inventive. So I starting spooning the pie well mess is the only way to call it, into mugs. As I'm doing this, Martin zones out into the tv and I start cracking up. He just looks at me when I do this, and looks away. Like - oh its just my wife cracking up again. And I couldn't stop, its so funny when I get into giggly moods like this, and for whatever reason maybe it was the nervousness of serving this weird pie mixture or that I had such high expectations for this first pie of the year that were smashed to the ground. But I was cracking up. And everytime Martin turned to look at me with a blank stare or I took a look at the mess that was my first lemon pie, it got worse. I couldn't even spoon the mess into the mugs. I was full blown now, I sat down on the kitchen floor with my pie spatula and laughed and laughed so hard I cried. Eventually I took a deep breath and stood up. I was going to serve my mess of a lemon pie without even ice cream, cause we were out. I brought the mugs downstairs and my sweet in laws ate the mess pie in the mugs...while saying it was delicious. They are such good people.
